ACT 3 Catering was proud to be invited to Costco’s Grand Re-Opening at the Costco Business Center in Fife, WA.

As a preferred vendor to Costco, ACT 3 Catering was onsite to showcase some amazing food selections, which were prepared exclusively with Costco food items.  We have listed the Costco items numbers and receipes below…ENJOY!

Smoked Chicken Alfredo with Penne

284007        1 lb Penne

44111          1 ½ cups butter- divided

382862        1 lb chicken breast halves- cubed

2 16oz containers Ricotta Cheese

9738            1 pint Heavy Cream

1 tsp Salt

12541          1 Cup grated Parmesan Cheese

1 oz liquid smoke

Directions:

-Bring a large pot of lightly salted water to boil. Add penne then cook 8-10 minutes till al-dente. Drain.

-Melt 2 Tbsp butter in large skillet over medium heat. Sauté chicken till 165F.

-In large saucepan combine ricotta cheese, cream, salt, parmesan cheese and remaining butter. Cook over medium heat until well combined, about 10 minutes. Stir in cooked penne and chicken; cook until heated through.
